Y'all! It's officially lemon season! Bright, beautiful lemons are popping up everywhere, it seems, and these little babies were just begging to be used in something other than a risotto or pasta sauce or as a splash in a cocktail. I've never done a lemon dessert, so I figured, why not?

Chinese Slapped Cucumber
I am back from China! We had an amazing time, but traveling is so exhausting and over the course of our 2 week trip, we were in 4 different cities and on 6 different planes. Whew! Believe it or not, this was one of our very favorite dishes our tour guide searched out for us. I definitely cannot pronounce nor write the name in Mandarin, but it literally translates to slapped cucumber.

Seafood en Papillote
As promised, y’all, here is a non-beef, perfect for the end of summer recipe! I don’t know what got into me last month… I posted way more beef recipes than I normally eat. Anyway, today is a fantastic dish. For you vegetarian (fish eating), dairy free and gluten free lovers out there, you’ll be extra happy! It’s fancy. It’s healthy (ish). It’s delicious. Pasta Primavera with a Light Mozzarella Garlic Sauce
"Hmm... what to have for lunch. No, don't want that, or that. Made that last week. That would be too heavy for lunch. What's in the fridge? Ugh, no not that. I do have those.... and those.... and that! And I need to use this before it goes bad... what about.... yes! Yes, that'd be perfect for today!"
