Meatless Monday : Warm Lentil Salad with a Poached Egg

How BORING was that Super Bowl? Not even the commercials were any good! I was expecting to bawl like a hungry baby at the Budweiser commercial with the puppies, but I just got this confused deja vu feeling that they had done a similar commercial a couple of years ago. Talk about stale. And I am so very sorry to any and all Denver fans out there- after the first half it was just mean what Seattle was doing to y'all.

I literally had every intention of blogging through July and then as soon as I was settled back into life in the States... which I thought would be a couple weeks after our arrival. Yes, you're right my dear friends. It's the end of June. The temperatures are squelchingly hot. My windows literally sweat with condensation during the day because of the temperature differences between my cool, comfortable house inside in comparison with the sauna/steam room that is the Okinawa summer. Egads, it's freaking hot. So why on Earth would you want to make soup in the middle of summer?

Miso Shrimp with Sautéed Vegetables (Clean and potentially Paleo)

Y'all, it has been a whirlwind of a past few weeks! Not really anything different has happened, other than I feel like I have been going non-stop from the moment I wake up at 5 am to the second I pass out from exhaustion at 10:30 pm with barely even a chance to check my email. It's pretty much a miracle my teeth get brushed and the dog gets fed and I haven't yet left my keys in the freezer. In the meantime, fast but fresh dinners like this one have been absolutely imperative during this recent craziness.

Leek Latkes

Passover (or as my friend Natalie says in Hebrew, 'Pesach') was this week, which means I heard the collective groan of my Jewish friends around the world as they refrained from eating leavened bread for 8 days. Many non-Jews in America don't really know much about Passover, (including myself!) other than it starts with a Seder in which matzo balls are involved. The Gospels of Mark, Matthew and Luke tout that the Seder that marked the start of Passover was also the Last Supper, which is pretty darn cool if it's true.

Chicken à la King (A Clean Recipe)


Are there any dishes that you enjoy nowadays that started out as a "what the heck is on my plate" type of thoughts? For me, Chicken à la King was one of those dishes, and I can distinctly remember that It was in the galley (Navy speak for cafeteria) on base in Pensacola, Florida when I first experienced the dish. I had gone through the line, not knowing what Chicken à la King was, but excited to try something new. Clearly, I was new to the Navy since the words "galley" and "excited to try something new" were in the same thought.

Rosa Parks' Featherlite Pancakes


How do you feel about breakfast in bed? Are you a person who hates a couple of crumbs in the sheets or would it be your ideal way to wake up? I can’t decide whether I think it’d be the best way to wake up for Valentine’s Day or a stress-fest since I prefer to be in control in the kitchen and would be involuntarily critiquing anything my incredible husband brought in for me. It also doesn’t help that I’m an extremely light sleeper and wouldn’t be able to keep myself in bed while he was in the kitchen cooking.

Roasted Vegetable Soup

I am on a soup kick lately- the weather here has been absolutely perfect for it. It's "winter" here in Okinawa, which means temperatures in the 50's, overcast and rainy. It's not the winter I would prefer, but I'll take what I can get. Just like the 30 Minute Chicken Noodle Soup I posted the other day, this recipe is high flavor, low maintenance.

Slow-Cooker Texas Chili


Chili is a very personal dish. Have you ever noticed that? I don't think there is another dish, except maybe pizza, that evokes such strong opinions. Everyone and their brother has the "right" way to make chili- with beans, without beans. With tomatoes, or without. Ground beef or cubed chuck. Suet or bacon fat. People get pretty passionate about it too- especially Texans, which I know from experience since I am a Texan. We are definitely the most opinionated of them all in the chili debate, and I'm not ashamed to say it.

I gotta say, it honestly wasn't my original intent to take this much time off from blogging--nearly 2 months!!-- but life just wedged its fat butt right in my way and prevented me from enjoying any of my hobbies for most of November and all of December. Healthy Green Smoothie

I have about 4 other posts I need to write, but I made this smoothie for breakfast this morning and immediately got to snapping pictures so I could post it today. I was a little leery of the green smoothie craze circulating around the blogosphere lately, but I've been feeling a little under the weather lately, so I wanted to get some nutrients into my system, and fast. A smoothie seemed like the fastest and most efficient way to do that, but I was concerned that the smoothies/shakes I had as a kid had so much sugar and dairy that it would completely negate the benefits of the included fruits.

No Guilt Caesar Dressing & Wraps

Hi, y'all, I am back! Not by choice, of course. Vacations are never as long as you'd like them to be, right? We got back from Sydney and I went straight back into a duty day followed by 2 night shifts. I also caught a cold the last day or so of the trip, so my taste buds have been hibernating waiting for this annoying virus to go away. So, in combination with my diet of tea and orange juice for the cold and complete confusion my body is going through because of the switch back to night shift, I honestly haven't made anything beyond a turkey sandwich in the week we've been back.

Roasted Garlic Hummus

I love hummus. Really anything this versatile with golden roasted garlic, protein and fiber that I can eat with a spoon, veggies or on wraps and sandwiches is a magical ingredient in my opinion. Put it on fish, chicken or toasted bread! Use it in sandwiches instead of mayo- it would go spiffily with bean sprouts, turkey and spinach. Schmear it on a wrap filled with chicken, lettuce, black beans and cucumbers. Dollop it on a salad with tomatoes, carrots, celery and radishes. The possibilities are ENDLESS!

Easter Ham Leftover Pasta



For those of you who might still be in your Easter food coma, I bring to you a quick recap of the last post: while I am not huge fan of ham, my husband Travis is. So this year for Easter, I made a quarter ham that even I thought was pretty tasty, thanks to my rosemary honey glaze. I also made a few other dishes so there was definitely no way Travis was going to pull a Joey-on-Thanksgiving-eatingthewholeturkeyinSantapants-stunt (anyone else a Friends fan?) so we had quite a bit of leftover ham.

Salad of the Moment


I did not grow up liking salad. At All. My dad's cooking is pretty good, so I think we were all so focused on the yummy food in front of us that no one really paid much attention to the bowl of literal rabbit food next to our plates. I remember my sisters and I were forced to eat it with what I am sure were awful expressions on our faces. Sorry, Mom and Dad. Iceberg, carrots and celery does not a yummy salad make. And I'm sorry for probably telling you when I was young that those three things DID indeed constitute a tasty salad. I have learned the way of the greens.
